Spaghettone con archetto

INGREDIENTS

Italian Wheat Spaghettoni con Archetto (from the Special Shapes line) no. 888 320g
Garlic clove 1
Canned tomatoes 650g
Basil to taste
Extra virgin olive oil to taste
Salt to taste

PREPARATION

  1. In a pan, sauté a clove of garlic in a drizzle of oil. Add the tomatoes, season with salt, and add a few basil leaves. Leave to cook with the lid on for 15-20 minutes over a moderate heat.
  2. Cook the Spaghettoni con Archetto no. 888 in plenty of salted water.
  3. In the meantime, remove the garlic from the tomatoes and blend using a hand blender, incorporating as much air as possible. Add a drizzle of oil and continue blending until the sauce is smooth, creamy and orange in colour.
  4. Then add to the pan with a few ladlefuls of pasta cooking water.
  5. Drain the pasta mid-way through cooking, combine with the sauce and finish cooking, adding a few ladlefuls of water if required. When the spaghetti is cooked and the sauce nicely absorbed, plate up and garnish with basil leaves.
