INGREDIENTS

Italian Wheat Spaghetti Quadrati no. 809 320 g
Cooked beetroots 2
Feta cheese 200 g
Shelled walnuts 30 g
Thyme to taste
Salt to taste
Pepper to taste

PREPARATION

  1. Cook the Spaghetti Quadrati no. 809 in salted boiling water.
  2. In the meantime, coarsely chop the peeled beetroots, transfer them to the blender jug and add 150 g of feta cheese, a pinch of salt and some freshly cracked pepper. Blend until smooth and homogeneous, adding a little of the pasta cooking water if required.
  3. In a frying pan, toast the walnuts with a few sprigs of thyme and set aside.
  4. Drain the pasta and mix in a bowl with the cream and a little cooking water.
  5. Serve by forming a nest of spaghetti, garnish with crumbled feta cheese, chopped walnuts and a few sprigs of thyme.
