INGREDIENTS

Organic Italian Wheat Penne Rigate no. 804 350 g
Small red onion 1
Red pepper 1/2
Yellow pepper 1/2
Courgette 1
Diced scamorza 40 g
White sauce 150 g
Grated Parmigiano Reggiano cheese 40 g
Extra virgin olive oil to taste
Basil to taste
Salt to taste

PREPARATION

  1. In a frying pan, sweat the finely chopped onion in a drizzle of oil. Add the peppers, diced courgette and a few basil leaves. Season with salt and fry for 6-7 minutes until tender, but not mushy.
  2. Set 2/3 of the vegetables aside and in the same pan add the Spaghetti no. 804 previously cooked al dente in salted boiling water. Add the white sauce and toss.
  3. Grease a muffin tin with oil and form spaghetti nests in each one. Place cubes of scamorza cheese in the centre and sprinkle with grated Parmesan cheese.
  4. Bake in a pre-heated oven at 200°C for 10-15 minutes until golden. Remove from the oven, transfer to plates and top with the vegetables. Garnish with fresh basil leaves.
