INGREDIENTS

Italian Wheat Orecchiette no. 847 350 g
Broccoli 500 g
Garlic clove 1
Red chilli 1
Rinsed anchovies 2
Stracciatella 250 g
Handful of taralli 1
Extra virgin olive oil, salt to taste

PREPARATION

  1. Peel and chop the broccoli stem, and break the top of the broccoli into florets.
  2. Cook the Orecchiette no. 847 for 7-8 minutes in salted boiling water. Add the broccoli to the same water and continue cooking for 6 minutes.
  3. Infuse a drizzle of oil in the pan with the garlic, chilli, and chopped anchovies.
  4. Drain and add the pasta and broccoli to the pan, along with a drizzle of cooking water, and cook for a minute, stirring constantly.
  5. Transfer to the plates and finish with the stracciatella, a few pieces of round-sliced chilli, and the crumbled taralli.
