Linguine con cavolo viola e blu di capra

INGREDIENTS

Italian Wheat Linguine no. 811 320 g
Purple cabbage 200 g
Garlic 1
Blu di capra cheese 100 g
Bicarbonate of soda 1 pinch
Extra virgin olive oil to taste
Salt, pepper to taste

PREPARATION

  1. Finely slice the cabbage and sauté in a pan with a drizzle of oil and a clove of garlic, then add a ladleful of water and season with salt.
  2. Cook for 10 minutes, then add a pinch of bicarbonate of soda, which will turn the cabbage blue.
  3. Remove the garlic, set aside a few tablespoons of cabbage, and blend the rest.
  4. In the meantime, cook the Linguine no. 811 to an al dente texture.
  5. Transfer the creamy sauce to the pan and add the pasta. Mix with a ladleful of cooking water and the blu di capra cheese, cut into cubes.
  6. Plate up and finish with the strips of purple cabbage previously set aside.
