INGREDIENTS

Italian Wheat Candele Corte (from the Special Shapes line) no. 892 350g
Yellow cherry tomatoes no. 448 2 trays
Garlic clove 1
Shallot 1
Yellow cherry tomatoes 100g
Chilli flakes, salt, extra virgin olive oil, basil to taste

PREPARATION

  1. Finely chop the garlic and shallot and sweat in a pan with a drizzle of oil. Add the drained yellow cherry tomatoes no. 448, a few basil leaves, the salt and the chilli flakes and cook everything for 10-15 minutes.
  2. Once cooked, transfer the cherry tomato sauce into the food processor jug and blend until smooth.
  3. Meanwhile, cook the Candele Corte no. 892 to an al dente texture in plenty of salted water, setting a ladleful aside.
  4. Pour the cherry tomato sauce into a pan, then add the pasta and a drizzle of the cooking water to incorporate the sauce well.
  5. Transfer to plates and garnish with slices of fresh yellow cherry tomatoes, the basil and a few chilli flakes.
